Did you know that raw chocolate is one of the most antioxidant-rich foods you can eat? The unprocessed, unheated, home made variety is a seriously healthy sweet fix and it’s so rich that you only need a little bit. The gorgeous model and author Abigail O’Neill invited us into her Byron Bay kitchen to show us how she makes her delectable raw chocolate (also the subject of her popular book Model Chocolate.)  The best part? It’s not hard – there are only six ingredients.

Ingredients

60g cacao butter, finely chopped

1 tablespoon cold-pressed raw organic coconut or macadamia oil

2 tablespoons raw nut butter

1 tablespoon pure maple syrup, raw dark agave or sweetener of your preference

¼ – 1/3 cup organic raw cacao powder

1 cup frozen organic mixed berries

Melt cacao butter and macadamia oil in a glass mixing bowl over boiling water. Remove from heat adding everything except berries and combine until beautifully smooth. Scatter berries into the bottom of some pretty moulds or a lined glass dish and pour warm chocolate over them tilting slightly to semi-coat each one. The icy fruit will set it in less than a minute! Refrigerate. Serve from the freezer or fridge.

5 minutes to prepare. 1 minute to set. Makes chocolate for 4–6.

TIPS: you can find raw cacao butter at health food stores or online, along with quality raw nut butter and raw cacao powder. Everything else you can find from the supermarket.
