Mornings can be hectic enough without having to worry about finding a delicious and nutritious way to start your day.  By preparing these easy breakfasts the night before, you can set and forget, your morning meal will be one less thing to worry about.


Berry Chia Pudding

Ingredients:

2 ½ tablespoons of chia seeds

½ cup of coconut or nut milk of your choice

Fresh berries

Granola (low or no sugar store bought or home made)

Directions:

Add chia seeds and your choice of milk into a mason jar and shake vigorously.  Refrigerate and let set overnight.  Add fresh berries, granola, and other desired topping in the morning to enjoy a delicious breakfast in no time.

 

Banana Bread Overnight Oats

Ingredients:

¼ cup of old-fashion or instant oats

½ cups of Greek yogurt

½ cup of coconut or nut milk of your choice

1 banana (mashed)

¼ teaspoon of cinnamon

½ teaspoon of brown sugar

Directions:

Combine Greek yogurt, milk, one mashed banana, cinnamon, and brown sugar into a jar.  Add either old-fashion or instant oats to the blend and mix well.  Refrigerate overnight.  Add sliced banana and a dash of cinnamon in the morning and enjoy!

 

No Bake Granola Bars

Ingredients:

2 cup of instant oats

1 cup of almond butter

½ of sliced almonds

⅓ cup of mini dark chocolate chips

¼ cup of organic honey

½ teaspoon of cinnamon

Dash of salt

Directions:

Combine all ingredients into a large bowl and mix well.  Line a thin pan, large enough for twelve granola bars, with parchment paper.  Press and flatten the mixture onto the pan and freeze until firm or overnight.  Remove from the pan, cut into bars, and enjoy an easy on-the-go breakfast.

 

Coconut Lemon Bites

Ingredients:

1½ cup of cashews and almonds

¼ of coconut flour

⅓ of shredded coconut

2 tablespoons of organic honey

1 tablespoon of coconut oil

Directions:

Crush cashews and almonds in a food processor until a fine crumble.  Slowly add the remaining ingredients into the processor until thoroughly mixed.  Roll the mixture into bite-sized balls and place onto a tray.  Freeze until firm or overnight and enjoy the boost of energy in the morning.
